Though it was made sometime in the 1950's-70's, and though it has been used and sharpened--expertly--it remains rock solid and undamaged in any way, ready straight out of the box to perform in even the most demanding kitchen at the very highest levels. In one key way, though, this knife is better than new, having been professionally edged for this sale by the good people at Ross Cutlery in downtown Los Angeles, among the best in the business. As such, it's WICKEDLY sharp in a way that very few kitchen knives ever can be--FAR sharper than when it was new and guaranteed to thrill even the most jaded user. It was made in Thiers, France with a forged carbon steel blade/bolster/tang with handle made from a tough polymer that resists stains, water and other forms of stress. If you've never used a carbon steel knife before, you're in for a treat.
Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! This knife is perfectly balanced and will make you wonder why you suffered for all these years without one. When you hold a knife like this it feels like an extension of your hand, not like something you're simply holding.
